Because all of the veggies are cubed in uniform manner, this salad looks really aesthetic…like little blocks. That is besides the fact that it gives your teeth a nice crunch workout which releases a ton of digestive acids, from your saliva, to help your overall digestion and cleansing process.

Ingredients:

2 Carrots ( peeled and cubed into 1 cm cubes)
2 Kholorabi ( peeled and cubed into 1 cm cubes)
2 cumbers cubed into 1 cm cubes (and yes I know that they are not root veggies, but they are yummy here too)
1 Beet ( peeled and cubed into 1 cm cubes)
1 Radish ( cubed into 1 cm cubes)
1 Red Apple or Pear ( cubed into 1 cm cubes)
Dressing:
1 cup Cilantro chopped super finely
2 sprigs of Mint chopped super finely
1 Lemon (Juiced)
2 Tbspn. Olive Oil
1 Tbspn. Organic Dijon Mustard
1 tsp. Agave
Sea Salt to taste

Prep. Steps:

Combine all of the ingredients for the dressing in a separate bowl.
Mix all of the beautiful cubes of Veggies.
Pour on the dressing and allow it to marinate for 20 min. and ENJOY!
